Abstract

The importance and recognition that tourism is acquiring in the world and, particularly, Argentina, encourages new places to incorporate this activity as a strategy for development. The industry’s characteristics make it necessary to think creatively and to innovate in order to be up-to-date in this activity. This article intends to show how the Argentinean tourism industry is reinventing itself, by studying the events in a village, Tomás Jofré, that has pioneered innovation and, by becoming a famous gastronomic pole, has introduced tourism activity as the main source of development for the town.
